Cappuccino Brownies

I used to hate coffee.

Strangely though, I just hated coffee itself, liquid, in a mug, yet loved everything else about it. My favourite smell in the world was and still is the scent of coffee. I would leisurely walk down the coffee aisle at the supermarket, taking a deep breath around the fresh coffee grinder, knowing full well I had no business being around something I knew I would never use. One of my old boyfriends had a dad who really loved his coffee, and I would always make sure I visited the kitchen to smell his latest beans.

I even loved any sweets that were coffee flavoured. Coffee candies, coffee ice cream, mocha shortbread, espresso cheesecake.. stick coffee in a baked good and I was a sucker for it. Sadly, even with all this coffee love, if you were to hand me a steaming cup of coffee, the first taste would make my face pucker in disgust. I’ve been known to liken iced black coffee to “slurping on a black hole”.

University late nights of work and studying changed that. Well, some of it.

Fruity Baked Oatmeal

The clouds are low today in Seattle. So low that I saw the top of one of them on the way to work.

Have you ever been just outside of an extremely foggy area and driven directly into it in such a way that you swear you could feel the transition despite all your car windows being closed? It’s rather surreal, and makes the world feel unmistakably autumn.

Days like these need soft blankets, warm puppy snuggles and hot breakfasts.

Your basic oatmeal is a standard for many people “on the go” who want a hot breakfast that’s doesn’t take much time. I don’t hate oatmeal, but we’ve never been best friends. Something about the texture and how goopy it is. Baked oatmeal, however, sounded like something I could get to know.

Flourless Peanut Butter Chocolate Chunk Cookies

When you think of a particularly loved unique treat, something from your childhood that you didn’t get all the time that was special, there are a few things that can come to mind. A small candy from your mother’s purse when you were being extra good. A slice of thick, frosted cake at a birthday party. Those soft, buttery, crumbly cookies that only your grandma knew how to make just so.

I have an unusual one from my childhood. Not an unusual food so much as a food that is unusual to think of as special.

Peanut butter.

Oh goodness, I love me some peanut butter.

Trevor’s First Layer Cake

Many will ask me, who bakes for the baker on their birthday? Does the baker do it for herself because she knows just how she likes things? Is a cake purchased from a  fancy bakery to give her a new project to strive for?

If you have an adorable husband, sometimes it’s him.

(Is it just me, or is there something particularly attractive about a man wielding a frosting covered offset spatula?)

With a number of Trevor birthday cakes under my belt, he felt it was time to return the favour.

Please note that in the 7 years I have known him, 6 of them on a very personal level, I have witnessed him bake once. Maybe twice, but I’m kind of hazy on that one. With this in mind, I tried to give him an easy out, giving him a general flavour category to follow so that he could pick something easy to make that still fell under the specs.

He didn’t let me get away with that.

Demanding to know what my favourite cake would be for my birthday this year, I confessed.
