Dipped Peanut Butter Cookies

My work sent me to Milwaukee last week.

It was somewhat of an abrupt trip as it got planned by others while I was in Canada and I was informed I was going the day I got back, which also happened to be only 6 days before the trip.

Add on to this some deep seeded anxieties for rushed planning, unfamiliar locations and airplanes and I was a wacky bundle of nerves.

There may have been stress tears at one point behind dark, private, closed doors. It happens, don’t judge.

On top of all that, my birthday party was already planned to happen the day before my departure to Milwaukee. A key point of background required to fully understand the ramifications of this is the fact that my tummy does funny things when I’m nervous.

Have you ever given up on a fabulously creamy mushroom crepe, after only three bites, despite it being most certainly delicious? Not to mention at your own birthday party?

I have. It’s not the best thing in the world.

Luckily, I have magnificent friends who are so warm and hilarious that you almost don’t care when you confirm that you are in fact done with your coffee ice cream and nutella crepe while the adorable creperie waitress with the perfectly bouncy curls raises her brows in “but you didn’t even finish the other one”, wide-eyed, searing judgement.

She may have seen right through your ruse of hiding most of the leftover crepe under melted ice cream like a child with peas under his napkin. You may have been projecting your own insecurities on the waitress when she was actually a sweetheart the whole time. Your stomach may be particularly cross with the five glorious bites you managed to sneak in before wondering if you’ve made a huge mistake.

But with a horrendously(hilariously) inappropriate joke from a friend to your right, and a squeeze and a kiss to the temple from the ever intuitive husband to your left and the night could never be better.

I love my friends.

To be fair to the business trip, it was actually a lot of fun and very productive, but I have a tendency to psych myself out of many a situation. And c’mon, it was my birthday. I’m allowed to be as dramatic as I want on my birthday. I’ll cry if I want to, cry if I want to!

These cookies are “I’m stressed to the nines and I need to bake something to calm me down” cookies. They have 5 ingredients. They are easy, simple, and delicious.

If you’re so stressed/tired/done-with-it that you don’t have patience for dipping, they actually have only 3 ingredients. You mix those ingredients together, in one bowl, then portion and bake. Then you have soft, chewy peanut butter cookies to comfort you when your tummy decides to calm down for 5 minutes.

Some of these cookies may have dipped into chocolate, then dipped straight into my mouth instead of into the peanuts.

It happens, don’t judge.

Dipped Peanut Butter Cookies

Ingredients

  • 1 cup peanut butter
  • 1/2 cup sugar
  • 1 egg
  • 4 oz. Baker’s semi-sweet chocolate, melted
  • 1/2 cup finely chopped peanuts (I like to use salted dry roasted peanuts for this as I think they taste great with chocolate!)

Directions

  1. Preheat oven to 325. Cream peanut butter, sugar and egg until well blended.
  2. Refrigerate for 30 minutes.
  3. Remove and roll mixture into 18 balls.
  4. Place on ungreased cookie sheet 2 inches apart.
  5. Flatten each ball by using a fork to make a criss-cross pattern.
  6. Bake 18-20 minutes or until lightly browned.
  7. Cool for 5 minutes on cookie sheet and then cool completely on a wire rack.
  8. Melt chocolate in a double boiler or in the microwave.
  9. Dip one end of cookie into melted chocolate and then dip into chopped peanuts. Repeat with other side.
  10. Place on wax paper covered cookie sheet and refrigerate until chocolate hardens.

  3. Oh these look beyond yummy. I am sad to say though, I’ll never be able to bake them since my son has a severe peanut allergy (I love peanuts but I love him more). I am however drooling over the pictures and can almost taste them. :)

    • Oh, your poor son! My brother has the same allergy! Props to you and your son, dealing with such a crazy allergy. I’m convinced that I’m mostly obsessed with peanut butter because it was so taboo in my home growing up! I’m a rebel! ;)
