They look delicious and the peppermints make them even more holiday scrumptious.
So I actually made these the WRONG way (which would’ve been your right way). The recipe said to save 1/4 cup of the processed candy canes for topping… but I only put 1/4 cup of the candy canes into the batter! I ended up with a not-too-sweet, more shortbread-like cookie. I was distraught because I was excited for the candy/crunchy cookie that you ended up with. I solved the problem by covering it in chocolate (of course) and sprinkling the excess of candy cane crumbs on top of the cookies.
The cookies turned out to be a big hit with the older folk because it wasn’t too sweet. Oh well! Next time I’ll read the recipe much more carefully.
